The crescentina is made according to a recipe that can have slight variations from family to family. This is the recipe collected by the Tourist information office (Iat) from Colli Bolognesi.
Ingredients for 4 people
- 250 gr flour
- 25 gr lard or butter
- 1 packet of fresh yeast
- milk (as required)
- salt
- lard or oil for frying
Preparation:
Mix flour with baking powder and a bit of salt, mix with the milk and lard (or melted butter). Roll out the dough with a rolling pin holding it high, do more "revolutions" always folding it and eventually roll it into a sheet of aboout ½ cm. Cut it into diamonds of about 5 cm. from the side, fry a few at a time into very hot lard or oil. When the pieces are swollen and flushed, put them on paper towels.
The crescentine are excellent, if you stuff it with cold cuts and traditional cheeses.
