Two weekends dedicated to boiled meat, a main course of the Bolognese tradition that is prepared less and less by local families and restaurants. Maybe this is the reason why the festival has become so successful year after year, attracting visitors also from outside the province.
The festival's main specialty is -of course- "bollito misto": various kinds of meat, long-boiled in broth and combined with tasty sauces. The most famous of them is "salsa verde", a cold rustic sauce made of parsley, vinegar, capers, garlic, onion and anchovies.
The menu includes other specialties such as pasta and beans, tortellini in capon broth, barbecue, tripe and friggione.
The festival may be an opportunity to visit the beautiful old town of San Pietro in Casale, with its arcades and its square. The town is accessible on foot or by bike from the festival through a 1-km long path.
