Mortadella is the star of a gastronomic and cultural tour including food tastings of the famous cold cut and other local specialties accompanied by the Pignoletto DOC dei Colli Bolognesi wine.
The festival takes place in Zola Predosa, where the main mortadella producers, namely Alcisa and Felsineo, have their plants.
The city center becomes the scene of a taste itinerary that celebrates the succulent cold cut, appreciated worldwide for its typical, delicate taste and for its fragrance, intense and lightly spicy. Mortadella has also gained Protected geographical indication (IGP) status under European Union Law.
Even though this delicacy is Bologna’s most representative gastronomic product (everybody knows it as “La Bologna”), it has its world production premises in Zola Predosa - 12 km from Bologna. The area of production broadened in the years, but tasting mortadella right in the place where it was born has a special flavour.
The festival is an occasion to taste original mortadella-based recipes, combined with Pignoletto, a local wine coming from indigenous Colli bolognesi (Bologna hills) grapes. Pale yellow in colour with greenish tinges, Pignoletto has a fine, fruity noise with hints of hawthorn flowers. It's also possible to try a mortadella-tasting menu including creative and traditional recipes, like the green lasagne with mortadella ragu or the petroniana "sbagliata" cutlet, of course garnished with mortadella.
The event includes not only degustations, but also shows and cooking shows, theatre performances, guided tours and a high quality food market.
