The “wilted sausage of pertica di mora romagnola” is a typical salami of Molinella tradition which is awarded a De.C.O. label affixed to each package.
It is produced with some parts of “Mora Romagnola” swine: its open-air rearing as well as its vegetable feed make its meat free from colouring agents and preservatives. Once it has been made into sausages, it has been matured on a horizontal perch(pertica): that’s why it is called "wilted sausage of pertica (perch) di mora romagnola".
All these stages of production, from the slaughtering to the maturing, are still made “the old-fashioned way”, according to the oral tradition which has been handed on from generation to generation.
The “wilted sausage of pertica di mora romagnola” (popular in the countryside of Molinella) has been certified by the Molinella town council through an administrative act.
The De.C.O. (Denominazione Comunale di Origine) is a municipal “typicalness certification” for agroindustrial products which are not otherwise protected. Agroindustrial products can only be labelled as such if they come from Molinella territory and comply with the necessary preparation, marketing and sale formalities as well as the characteristics as provided in the Production Regulation issued by the Molinella town council.
According to article n. 7 of the Production Regulation:
"The producer who use the De.C.O. label to produce the Salsiccia apassita della pertica di mora romagnola di Molinella must throughly comply with the technical rules as provided in the Production Regulation"
