The tortellini is a first dish of stuffed pasta, typical of the holidays meals and, in particular, of Christmas. They are prepared and served in the restaurants and homes of all the Bologna's territory, where nowadays you can find them at any time of the year and every day of the week.
The tradition wants that this dish of pasta filled with meat should be strictly served in a broth. A version of the recipe has been filed and recorded by the Accademia della cucina (kitchen Academy), but every family and chef have their own version with possible variations.
