The typical Pieve recipes are mostly simple dishes, prepared with natural ingredients such as flour, lard, eggs and vegetables. In the past the women of the family strove to bring out the flavour of a cuisine a little poor. Today those dishes are still cooked on the occasion of the local festivals.
One of the most appetizing pasta dish is the traditional "maccheroni al pettine" (striated macaroni pasta), main ingredient of the town festival scheduled every year at the beginning of the summer time, now at its 27th edition. Two weekends over June and July are the occasion to taste the famous striated macaroni in several flavours: topped with Bolognese ragù, Bolognese ragù and peas, truffle, ham or vegetable sauce.
Traditional main dishes, like grilled meat, complete the menu of this festival, set in the indoor food stand in the Parco Venturi.
The process to obtain this particular kind of "maccheroni" includes cutting out small squares from the pastry, strictly made by hand with a rolling pin, and scrolling the pastry squares on a stick after they have being pressed on a ''comb'' (tool of the old frame once used by housewives for weaving) in order to give them the typical striping.
